No Bake Keto Cheesecake with Strawberry Topping

This low carb no bake cheesecake is creamy, rich, and absolutely amazing with its fresh made strawberry topping. You’ll love this low carb strawberry cheesecake!

Ingredients

Keto Cheesecake Crust – no bake

  • 4 tablespoons ground flax meal
  • 1/3 cup almond flour
  • 1/2 cup ground walnuts (processed in blender)
  • 1 tablespoons powdered monkfruit sweetener
  • 2 tablespoons unsalted butter, melted
  • dash pink Himalayan salt

No Bake Keto Cheesecake

  • 2  8-ounce packages of cream cheese at room temperature
  • 3/4 cup sour cream
  • 3/4 cup powdered monkfruit sweetener
  • 1 teaspoon pure vanilla
  • 1/8 teaspoon pink Himalayan salt
  • 1/2 cup water
  • 1 packet unflavored gelatin

Instructions

Keto Cheesecake Crust – No Bake

  1. Butter the sides and bottom of a springform pan.
  2. Add all crust ingredients together in a small bowl and stir till thoroughly combined.
  3. But the crust into the pan and mush it down with your fingers until it’s evenly spread on the bottom of the pan only. Place in refrigerator until filling is ready.

No Bake Keto Cheesecake

  1. Add cream cheese and sour cream to a mixing bowl. Cream together till smooth with no lumps.
  2. Add sweetener, vanilla, and salt. Mix again till thoroughly incorporated.
  3. Put water into a small bowl. Evenly sprinkle the gelatin over the top. Allow to sit for 1-2 minutes until the gelatin has “bloomed.”
  4. Scrape the gelatin mixture into the mixing bowl with the cream cheese mixture and mix until smooth.
  5. Pour into the springform pan over the crust and smooth over the top with a rubber spatula.
  6. Refrigerate for at least 2 1/2 hours for firmer cheesecake or 30 minutes for softer cheesecake

There’s nothing better than freshly homemade keto strawberry topping for your cheesecake, pancakes, or ice cream! Try this easy sugar free strawberry sauce for cheesecake and you’ll see.

Ingredients

  • 1 Cup sliced strawberries (thawed, if using frozen)
  • 1/4 cup Lakanto monkfruit sweetener
  • 1 teaspoon lemon juice

Instructions

  1. Add the strawberries, sweetener, and lemon juice to a medium saucepan. Bring to a boil while stirring occasionally. The strawberries will begin to release their juices–this is normal and the reason you don’t need to add extra liquids!
  2. Reduce the heat to a simmer. Simmer for about 10 minutes (or longer if you prefer thicker sauce). Stir occasionally.
  3. Remove from heat and enjoy on top of cheesecake, pancakes, or ice cream! Save any leftover sauce in a sealed container the refrigerator for up to one week.

Notes

Sugar free strawberry topping will thicken in the refrigerator.
